Ingredients
Poached eggs
Hollandaise sauce
Spinach sauteed in butter or oil with garlic or shallots
English muffins or a thick slice of toast

2/ Build your Egg Florentine: put the spinach on a slice of muffin, then add a
poached egg on top of it..
3/ Add a dollop of
Hollandaise sauce and put the other slice of muffin on top. You can use a toothpick to hold everything together. Serve immediately.
