Ingredients
Poached eggs
Hollandaise sauce
Spinach sauteed in butter or oil with garlic or shallots
English muffins or a thick slice of toast

Preparation
1/ Slice the muffins in half, length wide. Toast them (you can also use your oven)

2/ Build your Egg Florentine: put the spinach on a slice of muffin, then add a poached egg on top of it..
Eggs Florentines : Step 3
3/ Add a dollop of Hollandaise sauce and put the other slice of muffin on top. You can use a toothpick to hold everything together. Serve immediately.
